Youngsters will learn the art of preparing a whole chicken for sauté encompassing essential knife skills along with the preparation of various vegetables to accompany savoury dishes.

Join expert artisan chocolatier Fiona Sciolti as she takes you through the various stages of making your own fruit based truffles and ganaches. This course will give you a sound understanding of working with chocolate and will, without a doubt, inspire you to make them for all those special occasions. If that’s not “hit the spot” there’s always the seriously grown up lollipops.

Fiona will also show you how you can easily make a simple and sumptuous hot chocolate. This gently spiced shot can be served in it’s own right, or as an accompaniment to a desert such as waffles with a mint cream. Deeee-licious!

Whilst you sup on your drinks, you will also be able to try out some fantastic new varieties of chocolate from Duffy Sheardown from Red Star Chocolates. Duffy has travelled to the far corners of the world to source some amazing single origin cocoa beans, which he conches and blends to create these unique bars of chocolate.

You will end the course by rolling the truffles you made earlier and finally you’ll collect your lollipops and truffles then beautifully hand tie bags of chocolate goodies to take home.

A culinary extravaganza took place in Barton-Upon-Humber as one of North Lincolnshire’s top chefs celebrated the official opening of his new cooking academy.

Nigel Brown, of Goxhill, is used to sharing a kitchen with celebrities such as Jean-Christophe Novelli and Ainsley Harriott. But now the culinary genius is hosting cookery masterclasses in a specially-designed kitchen at The Ropewalk in Maltkiln Road.

Nigel said: “We want people to feel comfortable when they are cooking and make the learning experience as enjoyable and exciting as possible.”

“It is exactly three years since I launched my first cookery DVD, so it is wonderful to think how far we have come in such a short time.
It proves if you have a vision you can grab it with both hands.”

Having worked in hotels and restaurants across the country, Nigel said the expansion of his academy, which had previously been based at his Goxhill home, had been a wonderful and exciting challenge. He said: “We want people to feel like they are cooking in their own home and we don’t get them using any equipment they wouldn’t use in their own kitchens.”

“It also means we can teach a wide range of abilities.It doesn’t matter if you are a keen cook or a complete beginner that doesn’t know how to chop an onion properly, there’s something here for everyone. All of our recipes are minimum fuss and maximum presentation.
All of our ingredients are sourced locally and can be picked up easily. Our workshops are an ideal way to pick up great tips to impress your family and friends.”

Nigel began running classes from the academy’s new home at the grade two listed building in June. Lisa Barker, academy manager, said: “Nigel is a classically trained chef who has worked with some of the biggest names in the industry, so this is a great opportunity for people to learn from a highly distinguished professional.”

“The courses we’ve run so far have been really successful and we’re already booking up well in advance. We’ve made our kitchen as homely as possible because, in our experience, people learn better when they are comfortable and relaxed.”

Keith Vickers, mayor of Barton-Upon-Humber, cut the ribbon at the official opening on Saturday. He said: “I was delighted to be part of the opening. Budding cooks who take advantage of Nigel’s masterclasses will be benefiting from the knowledge of one of the region’s greats chefs. The knowledge and their skills will live with them and most likely transform their cooking.”

Courses such as Fish And Shellfish Extravaganza, Chocolate And Sugarwork as well as kitchen-based lessons such as Know Your Knives will give learners a wide-range of culinary tips.

Traditional Italian Pasta Half Day Cookery Course

Tickle your taste buds with all kinds of flavoured and traditional fresh pasta.

We’ll show you how to make a wide variety of fillings and sauces to compliment your pasta and then give you the chance to express yourself by creating your own dish using a selection of fresh ingredients such as juicy vine ripened tomatoes, olives, pancetta, tender chicken, herbs and spices, wines and vinegar – the list goes on and on.

So dust off your pasta machine and book onto this Italian experience, you can even try making your own ciabatta with a glass of chilled Chianti.

Nigel holds these exclusive classes in his very own cookery school kitchen so you can enjoy the pleasure of cooking in a relaxed and friendly atmosphere. All the equipment we use is similar to what you will find in domestic kitchens up and down the country so whatever you learn you can recreate in your own home.

We limit our class size to a maximum of 8 so it doesn’t matter whether you’re an accomplished cook or can only switch on a kettle, we have the time to teach everyone some new skills and give you the individual attention you deserve.

All our courses, whether it be a half day session or a full day course with lunch, are fully hands-on and at the end of the class you can take your dishes to enjoy at home.

The academy can be found nestled at the foot of the Humber Bridge in Barton upon Humber, North Lincolnshire, within a Grade II listed building known as The Ropewalk. Hall’s Barton Ropery was an international name of excellence in the shipping and many other industries for 200 years. Hall’s Ropes made on the Barton site were used on all the major shipping lines and for the first ascent of Everest.

The factory was closed in 1989 and lay dormant until April 2000 when one fifth of the building was restored and opened as an arts centre housing 2 galleries, artists workshops, picture framing business and a Heritage Display. The centre currently attracts in excess of 20,000 visitors per year and is run by The Waterside Artists Co-operative.

In September 2005 the rest of the building was restored and is now home to 12 artist’s studios and 18 units being used for creative industries including digital, media, design and other related industries including a fantastic coffee shop and The Nigel Brown Cookery Academy.

The Academy is easily accessible by car, roughly an hours’ drive from Lincoln, Leeds, York and Sheffield with plenty of free parking. You can also reach us by train or bus, our nearest bus/rail station is Barton and the academy is a short walk away.
