Join expert artisan chocolatier Fiona Sciolti as she takes you through the various stages of making your own fruit based truffles and ganaches. This course will give you a sound understanding of working with chocolate and will, without a doubt, inspire you to make them for all those special occasions. If that’s not “hit the spot” there’s always the seriously grown up lollipops.

Fiona will also show you how you can easily make a simple and sumptuous hot chocolate. This gently spiced shot can be served in it’s own right, or as an accompaniment to a desert such as waffles with a mint cream. Deeee-licious!

Whilst you sup on your drinks, you will also be able to try out some fantastic new varieties of chocolate from Duffy Sheardown from Red Star Chocolates. Duffy has travelled to the far corners of the world to source some amazing single origin cocoa beans, which he conches and blends to create these unique bars of chocolate.

You will end the course by rolling the truffles you made earlier and finally you’ll collect your lollipops and truffles then beautifully hand tie bags of chocolate goodies to take home.

Newmarket Art, Craft and Design Show 2010

The Art, Craft & Design Shows concentrate on providing all that is best in British art and design. The original Newmarket show has proved very popular with exhibitors and the public and are expanding what they do to provide new opportunities for exhibitors to reach the discerning public.

The Newmarket show will again be held at the superb Millennium Grandstand on the famous racecourse that provides excellent facilities including a very large car park on hard standing nearby.

All five floors of the magnificent Grandstand building will be utilised with catering on the top floors. There are four efficient lifts serving all floors as well as stairs and escalators.

The event will again be supported by the Cambridge Evening News group of newspapers as well as county and regional magazines. BBC Radio Cambridgeshire is again one of the media partners.

The show will be promoting REAL FOOD – handmade, homemade, gourmet or simple, but all food has been produced from traceable sources, as well as of course organics (although not exclusively so).

For the first time The Nigel Brown Cookery Academy opened it’s door to pupils from Kirton Middlecott School in Lincolnshire.

The six lucky students were selected from the “Gifted and Talented” group by Head of Food Technology Sally Walsh to attend The Academy run by top chef Nigel Brown. Their day started with a tour round the garden, vegetable patch and greenhouse then straight into the kitchen to get “hands-on” preparing pastillage boxes to be filled later in the day with champagne chocolate truffles. After making some speciality bread with camembert and mediterranean vegetables the students moved on to preparing a lunch of chicken provencale en croute with buttered new potatoes which they all enjoyed in the dining room.

The afternoon was spent assembling and decorating their sugar boxes and creating little chocolate truffles to fill them. A great deal of tasting went on but hopefully a few truffles managed to make it home on the school’s minibus back to Boston.

Lots of fun and tasting was to be had at last weekend’s Dalemain House Craft and Food Show near Penrith in Cumbria. The food marquee was brimming with top class stalls offering every kind of culinary delight from oils, spices and tasty treats to pots and pans to die for.

The demonstration kitchen was kept very busy every day with Nigel Brown, Dan Webb and Richard Fox showing visitors spectacular dishes to recreate at home in less time than it takes to ring the take-away.
